We’ve seen a lot of opinions on how long it is best to “rest” roasted coffee before drinking. Even within our own company, we’ve had various views, some shaped by tradition, some by world barista competition winners, and some by personal preference. It’s confusing. So, we decided to share some scientific facts about the question:

HOW LONG SHOULD YOU AGE YOUR COFFEE BEFORE DRINKING IT?

Freshly roasted coffee evolves over time, affecting its taste, aroma, and texture. Our research has found:

Standard packaging (non-gas-flushed): Best enjoyed within 1-3 weeks post-roast (ideal at 1.5 weeks).
Gas-flushed packaging: Reaches its prime flavor after 2 weeks and stays fresh for 8+ weeks.

COFFEE FRESHNESS BY PACKAGING METHOD

  • Non-Gas-Flushed Coffee: Best enjoyed black after 1 week, excellent until 3 weeks.
  • Gas-Flushed Coffee: Perfect for black coffee from 2 weeks onward. If using milk, it can be enjoyed from 1 week as the stronger flavor cuts through milk better.

WHAT HAPPENS TO COFFEE AS IT AGES?

Roasted coffee undergoes two key processes over time:

1️⃣ Chemical Transportation – Movement of CO₂, volatiles, and water between the coffee and the surrounding air, affecting aroma and flavor.
2️⃣ Chemical Transformation – Reactions like oxidation, polymerization, and hydrolysis, changing the coffee’s composition and taste.

These factors, combined with roast level, storage conditions, and atmospheric factors, determine how quickly coffee flavors evolve.


OUR RESEARCH: HOW DID WE TEST COFFEE FRESHNESS?

We analyzed three roast levels (light, medium, dark) under two storage conditions:

Gas-flushed (2 pph oxygen) vs. Non-gas-flushed (21 pph oxygen)
☕ Tested at 1, 2, 4, and 8 weeks post-roast
☕ Evaluated by five trained tasters, including a Q-grader
☕ Rated on sweetness, mouthfeel, milk cut-through, and balance

KEY FINDINGS

🔸 Week 1:

  • Non-flushed coffee: Well-balanced and complex, ideal for black coffee.
  • Gas-flushed coffee: Harsh when black but great in milk.

🔸 Week 2-3:

  • Non-flushed coffee: At peak flavor, ideal window for drinking.
  • Gas-flushed coffee: Softens, with improved balance and complexity.

🔸 Week 4:

  • Non-flushed coffee: Loses complexity, less enjoyable in milk.
  • Gas-flushed coffee: More balanced, still excellent black or with milk.

🔸 Week 8:

  • Non-flushed coffee: 50% of tasters described it as stale.
  • Gas-flushed coffee: Still delicious, proving longer shelf life.

WHAT’S THE IDEAL COFFEE FRESHNESS WINDOW?

If your coffee is NOT gas-flushedDrink within 3 weeks for peak quality. It can still be consumed black up to 8 weeks but loses balance over time.

If your coffee IS gas-flushedIdeal flavor after 2 weeks, stays fresh for 8+ weeks with no noticeable decline.

For home brewers: Store coffee properly and consume within the recommended window for the best experience.
For café owners: Use fresh non-gas-flushed coffee within 1-2 weeks or opt for gas-flushed coffee for extended usability.
